Caciocavallu
FCheese of an easily melting type of consistency produced from cowmilk, with an oval form. The shape is carried out by hand.
It can also be smoked.
Its taste, when fresh, is pasty and sweet, when seasoned it becomes stronger and more intense.
Its structure is compact with very little holes, its crust is smooth and thin with a light yellow colouring.
Scamorza
Obtained from bovine whole milk, of a typical form that consents tying up with a string.
Generally it is consumed fresh, it has a smooth and thin crust of a white ivory colour.
It can also be smoked, which then assumes a yellow tending to ochre colouring with a slightly spicy flavour.

Provola
A product of an easily melting type of consistency derived from bovine milk.
It has a pear shaped form.  Its crust is smooth and thin, of a light yellow colour and a compact structure.
