Pecorino
Obtained from whole sheep milk, rennet and salt.
It is available sweet and mature.
Sweet
It is a cheese with a short maturing period, white, compact with very few holes, soft, sweet aromatic taste.
Mature
White tending to light yellow, compact with small and rare holes with a more marked and full taste.
With the advancing of its ageing the cheese acquires a pleasant spicy and decisive taste, consistent structure,hard,with a bit of a grain that makes it perfect for grating.
Pecorino pepato
Has a particular taste, determined by grains of pepper mixed with the curdling in the preparation stage. It is consumed as a table cheese accompanied by excellent red wine, ideal for those who prefer strong spicy flavours.
